Pineapple Pico de Gallo

minutesThis take on the traditional Pico de Gallo combines sweet and heat in a refreshing manner. It is easy to make in just a few minutes and uses ingredients that are largely already in your fridge.

Ingredients
4 Slices 4 Slices Pineapple
1 1 Large Red Onion
6 6 Medium Roma Tomatoes
2 2 Juice of 2 Limes
1/3 Cup 1/3 Cup Chopped Cilantro
1 or 2 1 or 2 Seeded Jalapeno peppers
1 Pinch 1 Pinch Salt to taste
Directions
- Dice the Pineapple slices, Roma Tomatoes, finely dice the red onion, and chop the cilantro.
- Seed and dice the Jalapeno peppers, you can add more or cut out completely depending on how hot you want it. You can also substitute for Serrano peppers if you want a bit more heat.
- Add the salt, pepper and lime juice to taste.
- Serve immediately with chips or as side for your favorite dish.
Notes
- Amounts should be enough for a large bowl of pico de gallo for about 10 people. You can store any leftovers in an airtight container in the fridge for up to 3 days.
