This creamy guajillo chile sauce is made with dried guajillo peppers. This is the perfect sauce if you like peppers without too much of a hot kick. You have to soak them in water before you can use them. I also use plain Greek yogurt, garlic, and lime juice. This recipe is similar to my creamy chipotle yogurt sauce only using the less hot guajillo peppers. I favor Yogurt based sauces as I’m not a fan of mayonnaise or any mayo based sauces. I think mayo has a place in certain dishes but its usage in my kitchen is usually very limited. This is one of my favorite “spicy mayo” type sauce that goes very well with seafood based tacos. You can try this creamy sauce on my shrimp tacos or my beer battered tacos. You can also prepare the creamy chipotle sauce if you want to offer a sauce with more spicy kick.
Creamy Guajillo Pepper Sauce

Ingredients
4 4 Dehydrated guajillo peppers
2 cup 2 Plain Greek yogurt
4 4 Garlic Cloves
1/2 1/2 Juice of half a lime
1/4 cup 1/4 Cilantro
Salt and Pepper to taste
Directions
- Soak the dehydrated guajillo chiles in water for 10 minutes. Don't throw the water away as you may need it if the sauce is too creamy for your liking.
- Combine all the ingredients in a blender or mini-food processor. Mix until the sauce is smooth and creamy. Taste and adjust the spice, and salt level based on your preference.
